Ingredients
· 2 eggs
· 2 tbsp of tapioca gum
· 2 tbsp of oat or buckwheat bran (I used 1 tbsp of each)
· 1 tsp of salt
· 1 handful of spinach leaves (10-15 units)
Stuffing: Braised ground duckling (it can be shredded chicken or any other stuffing of your choice)
Sauce: #Tomato SaucePasta

Preparation mode
In the blender, beat all the ingredients of the dough. Preheat a skillet over low heat and brush with a little olive oil.
Put 1/3 of the dough and spread it, turning the skillet. When you release from the bottom, remove.
Place the stuffing on one of the edges of the dough and roll up, forming the pancake.
Cover with the sauce and, if desired, place in the oven to brown.
Yield: 3 pancakes (I made the recipe x4).
