· 1 cup of cooked green corn (you can use it from a can if you prefer, I really like the cob!!)
· 1 cup of coconut milk
· 2 eggs
· 1/4 cup coconut oil
· 1/2 cup of powdered demerara sugar (blended in a blender) or xylitol (I made it with sugar)
· 1/2 cup oat bran
1/2 cup cornmeal (or cornmeal)
· 1 tsp baking powder
1 tsp fennel seed (optional)
· demerara sugar and cinnamon powder for sprinkling

Method of preparation

In the blender, beat the eggs with the sugar for 3 minutes. Add the other ingredients and beat again, except for the yeast and fennel, which must be mixed later.
Place the dough in a greased and floured mold (I used oat flour) and bake in a preheated low oven for approximately 25 minutes.
Unmold, wait to cool down and, with the help of a sieve, sprinkle a little sugar with cinnamon. I cut and placed hearts before sprinkling to give this effect.
