Ingredients
1 large carrot (150g)
2 eggs
1/2 cup coconut milk
1/3 cup coconut oil
1/2 cup demerara sugar (or sweetener of your choice)
1 cup gluten-free flour mix (I use my #flourcrust mix)
1 tsp baking powder
Roof
1 cup of milk of your choice
1 Tbsp demerara sugar
2 Tbsp Cocoa Powder

Bring to a low boil and simmer until thickened, approximately 15 minutes.
