Vegetable milks are great allies for those who use diets that restrict milk of animal origin, such as vegans or people who are lactose intolerant or allergic to milk protein.

Nowadays, we find a wide variety of industrialized vegetable milks, however, in addition to having a very high price, they often have preservatives, dyes, sugar and sweeteners in their composition.

An alternative is to prepare them at home. The process for obtaining milk from different types of grains and cereals is very similar. Most of the time it is necessary to soak the grain or cereal for a few hours, mix it with water and strain it, but this is not the rule. In some cases, it is not even necessary to soak or strain, making the process more practical.

ALMOND MILK / CASHEW NUTS

Ingredients:

  • 1 cup unsalted, raw almonds OR cashews
  • 4 cups of filtered water

Preparation mode:

  1. Let your almonds soak for 8 hours so that the phytates (antinutrient substances) are eliminated.
    The amount of water should be enough to cover them.
  2. Drain the water and discard.
  3. Blend the almonds in a blender with the water in the ingredients.
  4. Strain the milk to separate the solid from the liquid. It can be with a clean, fine cloth and sieve, or with a voile. Squeeze well to get the most out of the liquid.
  5. Do not throw away the almond/nut waste. They can be used in several recipes.

COCONUT MILK

INGREDIENTS

  • 2 cups grated fresh coconut
  • 1 cup of filtered water

METHOD OF PREPARATION

  1. In a blender, add the coconut and water and blend until it becomes a white liquid (about 5 minutes). As it is natural, it will not have the thickness or super white color of industrialized products.
  2. In a clean dish towel (or new cloth diaper), strain the mixture over a bowl, squeezing well with your hands to extract all the milk. Now all you have to do is use it in preparations such as moquecas, sauces, smoothies or sweets. Coconut milk can be stored in the refrigerator for up to 3 days.
