This recipe is incredible. Delicious, gluten-free, sugar-free, and vegan.

Do you know what that means?

People who follow a diet vegan exclude from your diet any type of food of animal origin, as meat, fish, dairy products, eggs and honey. AND this is the main difference from vegetarianism, which excludes the consumption of meat and fish, but does not prohibit the ingestion of derivatives, such as dairy products, eggs and honey.

For some people, it's much more than a food choice, it's a lifestyle that's also based on environmental issues, love and respect for animals.

According to the definition of the Brazilian Vegetarian Society (SVB), those who do not consume any type of animal meat are called vegetarians. Within this classification are:

Ovolactovegetarians: consume eggs, milk and dairy products

Lacto vegetarians: consume milk and dairy products

Ovovegetarians: eat eggs

Strict vegetarians: do not consume any type of food of animal origin.

Raw vegetarians: consume only raw food or food prepared at a temperature of 42ºC

Frugivorous vegetarians: consume only fruits

Vegans: choose to exclude all forms of animal exploitation and cruelty, not only in food but also in all other areas of consumption such as clothing and personal care.

INGREDIENTS:

Pasta:

  • 1 cup lightly toasted almonds (160g)
  • 8 pitted dates (60g)
  • 2 tablespoons of coconut oil

Filling:

  • 150ml vegetable milk (I use cashew nut milk)
  • 120 g of 70% chocolate
  • ¼ cup of sweetener (optional)

PREPARATION MODE:

In a processor, beat the almonds. Add the coconut, dates and coconut oil and beat again, until it forms a farofa that binds when pressed.

Transfer to a 20 cm diameter removable background shape, lining the bottom and sides. Take to bake in preheated oven at 180°C for 5 minutes.

For the filling, melt the chocolate, add the softsugar, coconut milk and biomass, mixing with a fork.

Place the mixture over the pre-baked dough and refrigerate for at least 8 hours or until the filling is firm.

If you prefer, freeze the pie and remove it from the freezer 15 minutes before serving.
