We're going to be using 70% cocoa chocolate and egg whites, and I want to give you some tips on that before we get into the recipe.
Clear in snow without error!
Clearing snow seems to be a very simple thing, but sometimes things don't go as expected. Therefore, when a recipe calls for egg whites, some tips can help you.
- Eggs need to be fresh, if you use old eggs the point will definitely be different. To know if an egg is old, just put it in a glass of water and if it floats, it's already old. Avoid using it in recipes.
- For egg whites, the temperature of the eggs matters and they must be at room temperature. Leave it out of the fridge for at least a few hours before even separating the whites from the yolks.
- Clean and dry utensils, especially the mixer and bowl. Sometimes we think that the utensils are clean, but they may have a little bit of grease left over from other recipes. For the egg whites to be good, they need to be perfectly clean and free of grease.
- The salt will help stabilize the whites and reach the point you need, but it's just a pinch, if you add too much it will ruin the recipe.

EASY CHOCOLATE MOUSSE
Ingredients
- 200ml pasteurized egg whites (or 6 egg whites)
- 200g of 70% cocoa chocolate
Preparation mode
Melt the chocolate in a water bath or in the microwave. Reserve.
Beat the egg whites (which should be at room temperature) until stiff and mix in the chocolate.
Refrigerate for 1 hour before serving.
