Ingredients – BASE
1 cup pitted dates
1 cup lightly toasted almonds
Process the almonds, add the dates and process again. Open this dough in a removable background shape (I used 20 cm, put a plastic one before to make it easier to unmold). Reserve.
Ingredients – CREAM
200g lacfree natural yogurt @verdecampo
200g ricotta cream or cream cheese
2 tbsp of sugar/sweetener of your choice (I use @chocolifealimentosfuncionais softsugar)
1 tbsp unflavored gelatin
40 ml of hot water (to hydrate the gelatine)
1 pinch of salt
Dissolve gelatin in hot water and mix with all other ingredients. Put it over the dough and put it in the fridge for 3 hours.
Ingredients – RED FRUIT CALDA
100g of strawberries
100g of blackberries
100g of cherries
100g blueberries
¼ cup sugar/sweetener of your choice (softsugar again)
1 tsp lemon juice
½ tbsp corn starch
1/4 of a cup of water

Preparation mode
Divide the fruits into 3 parts: one to beat, one to chop and one to decorate. Beat the part to beat along with all the other ingredients. Place in a pan, along with the chopped part, and lead to low heat to thicken. Allow to cool and place over the cream, after unmolding, and garnish with the rest of the fruit.
